Vegan

Historically, Japan is a Shinto country. But it is also deeply Buddhist. And in accordance with the precepts of this religion, it is vegetarian or even vegan: the Japanese authorities have banned the consumption of meat for almost 1,200 years. However, the Japanese were allowed to eat fish and seafood.

At the end of the 19th century, this compulsory vegetarianism disappeared in a few decades under the influence of carnivorous Westerners… It has to be said that the Dutch, with their rosy cheeks and broad busts, had an ox-like effect on the local population. Suddenly it was cool to eat cows.

This Western dietary influence continues to this day: the Japanese eat less and less fish (and rice) and more and more meat (and bread). But the roots of Japanese cuisine remain deeply vegan. That’s why we can offer you a wide range of animal-free products (no eggs or milk), from dashi stock to tsukemono pickled vegetables.
