Yuzu

Yuzu is the star citrus fruit of Japanese cuisine. Green to yellow in colour, depending on its ripeness, it has large seeds and produces little juice. It has an intense, distinctive aroma, somewhere between lime, grapefruit and mandarin. In truth, it is unique, and its qualities make it the fruit of choice for chefs and cooks the world over.

In Japan, at least, yuzu plays a key role in gastronomy. It can be found in the form of rind, powder, sauce, pure juice, syrup or in the preparation of the famous ponzu sauce. Its use gives a unique freshness and personality to dishes, both savoury and sweet.

It is also the source of many drinks, from simple lemonade to liqueurs known as “yuzushu”. Some sakes even use its juice!
