Black garlic is a fascinating product that is very different from fresh garlic but retains its nutritional qualities. This is thanks to fermentation, a marvelous process that transforms products without denaturing them, revealing instead all their complexity. Without the need to heat it, the garlic candy in its shell goes from fresh pungency to balsamic aromas, with notes of prune, licorice or caramel.
