Description
A real dashi made from kombu and dried bonito for dilution: 1 serving of concentrate for 17 servings of water. Enough to make several miso soups. One of our customers (and friend) told us that this concentrated dashi saved his marriage.
Usage:
Dilute about 1 part concentrated dashi to 17 parts water (adjust according to your taste and how you will use it). You can use it to make a real dried bonito dashi broth, but it can also be used to make soups with a lightning-fast umami flavor, or to subtly flavor a sauce (but don’t overdo it!).
Storage:
Store in a cool, dry place away from light. Refrigerate after opening.
Ingredients:
Fermented wheat spices (35%), water (33.28%), mirin (10%), salt (7.5%), sugar (7%), dried bonito powder (3.8%), rice vinegar (2.5%), kombu (0.92%).
