It’s simple: the Sumiya Brewery produces nothing but mirin, including this organic, handcrafted Mikawa mirin. Founded over a century ago, this company is deadly serious about the sweet sake that is so useful in Japanese cooking. As proof, it is a member of the National Chamber of Old-Fashioned Mirin and the Brewers’ Guild of its native Aichi Prefecture. No wonder Mikawa mirin is excellent.

The Sumiya Brewery takes advantage of the relatively high temperature of Aichi Prefecture and the high quality of the local water to conduct long fermentations: twelve months in the case of Mikawa mirin. That’s twice as long as required for “authentic mirin” certification, but it’s worth it: Mikawa mirin is rich in rustic flavors, between floral honey and pecan nuts. It’s also worth noting that its alcohol comes entirely from fermentation, because unlike the makers of the new industrial mirin, Sumiya doesn’t mix any distilled alcohol into its products.

Use:

Add sweetness and roundness to your dishes, cut through the acidity or bitterness of a condiment.

Storage:

Store in a dry, dark place. Once opened, keep refrigerated.
