Description
This instant miso soup will delight you with its “premium” quality; in fact, it’s guaranteed to contain no coloring or additives and is produced in the Miyazaki region, a prefecture on the island of Kyūshū (southern Japan). In addition to giving its name to a Japanese superstar (Hayao Miyazaki, who is a director, producer, screenwriter, author and mangaka), Miyazaki is known for its natural heritage, especially its mountains (Kirishima) and waterfalls (Sekinoo), which are popular destinations for tourists from all over the world.
This is undoubtedly what gives the miso used in this soup its richness: a barley miso rich in glutamic and inosine acids, two taste enhancers that are also good for the metabolism (glutamine in particular is said to reduce digestive disorders).
In the bowl, this translates into a condensation of umami, with the preserved nutrients and flavors of miso revealed by the effect of hot water. Ah, the wonders of fermented paste! Here enhanced with shiitake mushrooms for subtle woody notes. A vegan version of dashi without the smoked bonito (but available here!).
