Description
This black sesame paste is a product of Wadaman, which has been offering all the treasures of the sesame seed since 1883.
Among the hundred or so products developed, this black sesame paste, made exclusively from black sesame, highlights the special character of this cousin of the blonde (or white, as the case may be) sesame: a more pronounced crunch and a more intense flavour, without being bitter, but with lovely roasted aromas reminiscent of peanuts.
Add to this the many properties of sesame that make it an essential ingredient in Asian cuisine: magnesium for stress, calcium for bones, anti-inflammatory zinc, vitamins and iron… and you’ve got a health food!
Use:
Sesame paste (also known as ‘tahini’ in the East) is a basic ingredient in cooking. It can be used in a variety of ways to add texture and a delicious sesame flavour. It is used in hummus, of course, but it can also replace butter in baked goods (cakes and cookies). It is also a wonderful addition to vinaigrettes, adding a little density, and can be a great base for a sauce to accompany pasta.
Slightly fuller than white sesame paste, black sesame paste also adds colour to light preparations, especially those based on cream.
Be sure to knead the bag of sesame paste well before use to blend the oil and paste, which can become phase-shifted over time.
Storage:
Store in a plastic bag in a cool, dry place away from light.
