Description

This high quality sweet sake or mirin is made from organic Akitakomachi rice. It belongs to the hon mirin or “authentic mirin” family and requires two months of fermentation to produce. Naturally, it has all the qualities you’d expect. Its flavor is complex and elegant, its sweetness is naturally high, and its alcohol content is around 15°. It has nothing to do with the modern “shin mirin” that is hastily produced in large quantities, with little aroma and low alcohol content.

In addition to its authenticity, this mirin is remarkable for the rice it is brewed with. In fact, Akitakomachi rice is a high-quality table variety known in Japan for its mild aroma and light texture. It is one of the most widely consumed varieties in the archipelago, after the almighty Koshihikari and the delicate Tsuyahime.

This mirin is a creation of specialty brewery and vinegar maker Oochi, a company known for its organic products. (We also offer their pure rice and sushi vinegars, ponzu, and sesame yuzu sauce… all excellent). Let’s face it, the Japanese can be a little heavy-handed when it comes to pesticides. In contrast, the JAS organic certification of the rice used to make this mirin guarantees that it is grown without synthetic chemicals or GMOs, with respect for the soil and biodiversity.

How to use:

Add sweetness and roundness to your dishes, cut through the acidity or bitterness of a condiment.

Storage:

Store in a dry, dark place. Once opened, keep refrigerated.

Akitakomachi organic rice, koji, sugar (49.35%), salt (1.3%).
