Description
This sake from Yamagata Prefecture is brewed with 100% Miyamanishiki, a type of sake rice renowned for the fresh, balanced aromas it develops during brewing. The result is a fruity sake with a delicate acidity. We would characterise it as a drier version of Dassai 45. We are pleased to confirm that we import the 30-45 ourselves.
Storage:
This sake should be stored in a cool place, with a temperature between 2 and 5°C. As with all sake, we recommend protecting it from light. To ensure optimal storage conditions, it is recommended that the bottle be kept upright in a dark environment. It is important to note that placing the bottle on its side can cause the sake to come into contact with the cork, which may result in damage.

Water, rice, koji rice. (Alcohol: 16%)
Shelf life:
This sake can be stored for years if it is opened correctly and stored under the right conditions (see above). Following opening, the product’s shelf life is subject to personal preference. The ‘standard’ shelf life is approximately ten days in the refrigerator, though some connoisseurs opt to store their bottles in a cool place for up to three to four weeks, or even longer. The decision depends on your preference for oxidised sakes.
Serve chilled:
We recommend serving this sake chilled, at a temperature between 8 and 10°C. A wine glass will allow you to better appreciate the wine’s bouquet, but a sake cup will reveal its texture more fully. There is no need to worry, as it will be excellent either way.
