Description
Yamagen has specialized in fermentation since the 18th century. So it’s no surprise that their soy sauce is delicious. Based in Takaoka since 1772, the company sources its raw materials locally, in Toyama Prefecture. Between the mountains and the sea, the climate is ideal for growing rice, but also for producing fermented sauce. The surrounding mountains provide the region with excellent groundwaters that bring their mineral richness to the preparation of soy sauce.
Available in 150ml bottles, Yamagen’s Shiitake and Kombu Soy Sauce is a fine example of the company’s expertise. It is clear and made from naturally fermented soy sauce. Its flavor is mild, delicately sweet, and the aroma of the shiitake broth adds a rich, deep umami flavor. Kombu seaweed adds its own special, smokey character for the perfect combination. It is also suitable for vegetarians.
