Description

Bando Foods harvests several types of citrus fruits in its orchards. This farm has many trees scattered on the slopes of the mountainous region of Tokushima Prefecture on the island of Shikoku, near the town of Kamikatsu. These include yuzu, sudachi and yukou. The orchards are located between 300 and 400 meters above sea level, with abundant rainfall and wide temperature ranges, producing particularly fragrant fruit.

Bando Foods was certified by the Japanese organic label JAS in 2018, and is also recognized in Europe. As such, it is one of the few organic Japanese citrus fruits producer, if not the only one, available on the market.

Once harvested, yuzu is used to make juice. But its rind, powdered and roasted, accompanies a unique salt for an incomparable marriage. The salt comes from a million-year-old quarry. The floral, slightly bitter flavor of roasted yuzu is a perfect match for the powerful flavor of rock salt.

Use:

Bando Foods Yuzu Salt can be used to season a fruit salad, grilled white meat or grilled fish. While traditionally used for tempura and sashimi, this Yuzu Salt brings out the best in vegetable stir-fries and develops a remarkable umami in broths. Most importantly, it’s best sprinkled on your hand before taking a shot of good tequila (in moderation). This is the best way to release all its aromas.
