Japanese sesame paste, known as “neri goma”, is made from ground sesame seeds. In its pure form (no additives), it is a Japanese cousin of the Mediterranean tahini. Combined with miso, it is known as ‘goma miso’.

It has a creamy texture and a rich, nutty flavour. It is used in a variety of savoury dishes (sauces, noodles, salads, broths, etc.) and is sweetened with sesame seeds in the evening. It is an essential part of Japanese cuisine.

Neri goma is also a key ingredient in the preparation of sauces to accompany vegetable or fish dishes (such as gomadare sauce or sesame vinaigrette). It can be diluted with water or dashi stock to adjust the consistency of broths, as in the recipe for Tantanmen, a Chinese-inspired ramen in which sesame adds depth and activity.
