Here’s a high-quality sesame paste that has won over Japan’s finest taste-makers. Yamada Seiyu (the company behind this product) selects the best sesame seeds according to strict specifications based on appearance, freshness and aroma. The seeds are then roasted according to the rules of the art, i.e. slowly, in an iron pot surrounded by bricks and placed over a wood fire.
The sweetness of the white sesame is then enhanced by the subtle toasted notes that give this sesame paste its character. All that remains is to grind the seeds with a millstone and then sand them several times, which completes the release of their fragrance.
The whole process produces only a few kilos of sesame paste at a time, which makes this product exceptional.
Use:
Sesame paste (also known as ‘tahini’ in the East) is a basic ingredient in cooking. It can be used in a variety of ways to add texture and a delicious sesame flavour. It is used in hummus, of course, but it can also replace butter in baked goods (cakes and cookies). It is also a wonderful addition to vinaigrettes, adding a little thickness, and can be a great base for a sauce to accompany pasta.
Be sure to knead the bag of sesame paste well before use to blend the oil and paste, which can become uneven over time.
