Japanese furikake is used for seasoning white rice and other dishes. It usually consists of sesame seeds, seaweed, dried fish (smoked bonito, mackerel, anchovies, etc.), salt, and sometimes sugar. Furikake concentrates a lot of umami and is often crunchy thanks to the sesame seeds.

It is usually sprinkled over freshly cooked rice, but can also be used in salads, scrambled eggs or omelets, noodles or soups. Its different shapes and uses make it a versatile and truly delicious condiment!
