Deliciously addictive, this sweet “tamari” (read “old-fashioned” or “traditional”) soy sauce is an exception: denser than a classic soy sauce, it also has a more pronounced flavor. This is the result of a slow aging process that allows the soy proteins to express their umami. The right balance of salt (less present) and sugar (added) gives this tamari soy sauce a long-lasting flavor.

More difficult to produce, it’s not available everywhere. The Yamami Jyozo company, established in the 1950s in Aichi Prefecture (Nagoya region), is responsible for this version, which is appreciated by chefs and restaurateurs. Naturally rich in umami, it can be used in a wide range of sauces (demi-glace, wine, yakiniku…), making it an interesting product to have in the kitchen. A gluten-free product (it does not contain wheat, unlike non-tamari soy sauce)

Usage:

Sweet Tamari Soy Sauce is a classic accompaniment to raw fish (sushi and sashimi), but it’s also great in the kitchen: add it to sauces, drizzle it over stir-fry dishes or brush it over poultry for a glazed finish that’s as Asian as it gets.

Storage:

Glass bottle, store in a cool, dry place away from light and refrigerate after opening.
