Igeta Shoyu has been made by hand since 1912. For over a century, its mastery of fermentation methods has enabled it to produce soy sauces of the highest quality. Igeta is located in Shimane Prefecture, southwest of Honshu Island. In Izumo, near Hamayama Park, Igeta employees work on the cedar wood barrels where the fermentation process takes place. With the care taken in the selection of local raw materials and the purity of the spring water used (recognized as one of Japan’s top 100 sources), the result does not disappoint.

How to use:
