Description

The star ingredient of Japanese cuisine, miso (pronounced “misso”) is a must-have that comes in many varieties. This one belongs to the kinzanji miso family, which is characterized by its texture, which is thicker and can contain chunks. Made from barley and soy (fermented, that’s the principle), it contains green chili peppers that add heat to the sweetness of the grain.

An original product of Horaiya Honten, founded over 100 years ago and based in Koriyama, Fukushima Prefecture (northern Japan). Horaiya Honten specializes in the artisanal production of koji (malted rice), another Japanese specialty that is essential for the preparation of fermented preparations.

This miso, like all Horaiya Honten products, is guaranteed to be free of colorants, preservatives and other chemical additives. Pure pleasure, to be consumed in moderation (as with all fermented products).

Also available in an eggplant version for added sweetness.

How to use:

Unlike traditional miso, which dissolves in broths and other preparations, Kinzanji miso can be used to season steamed rice, porridge or vegetable sticks (carrot, cucumber…). It can also be used to season tofu or red meat, halfway between a garnish and a condiment.

Storage:

Plastic bowl, store in the refrigerator.
