Description
Like all sakes from the Haneda Brewery, Honoka Shiboritate is all about the raw materials: its aim is to let you feel the power and depth of the rice and water. In this sense, it is a purist’s sake: no floral or fruity aromas, no marzipan or toast. Just the eternal nobility of earth and stone.
Preservation:
As an unpasteurized sake, Honoka Shiboritate should be stored in a cool place between 2 and 5°C. Even more than pasteurized sake, it should be protected from light. For longer storage, it is best to store the bottle upright in a dark place. Laying the bottle down brings the sake into contact with the cork, which can be damaging. We should point out, however, that some purists like to store unpasteurized sake at room temperature to allow its aromas to develop.

Water, rice, koji rice (Alcohol content: 16.5%)
Shelf life:
Before opening and under the right conditions (as described above), this sake can be kept for several months. Unpasteurized sake is alive and therefore fragile. After opening, it’s a matter of taste: the usual shelf life is about ten days in the refrigerator. After that, your unpasteurized sake runs the risk of developing flavors that purists consider flaws… Or interesting to the adventurous. It’s up to you.
Serve chilled or at room temperature:
This sake can be served chilled, between 8 and 10°C, or at room temperature, between 13 and 16°C. When served chilled, its aromas will be more concentrated and its alcohol more subtle. At room temperature, it is more full-bodied and reveals a little more of its alcohol. To best appreciate its bouquet, use a wine glass. For those with a passion for texture, we recommend a sake cup.
