Like all sakes from the Kawanishiya brewery, this cuvée is reminiscent of the mountains and snow of its birthplace. A sake of great purity for those in search of a certain Japanese soul made of sublime rice and crystal clear water.

Storing:

As an unpasteurized sake, Yushin Blue should be stored in a cool place between 2 and 5°C. Even more than pasteurized sake, we recommend to protect it from light. For longer storage, it is best to store the bottle upright in a dark place. Laying the bottle down brings the sake into contact with the cork, which can be damaging. We should point out, however, that some purists like to store sake at a temperature other than room temperature in order to develop its aromas.

Water, rice, koji rice (alcohol: 15.8%)

Aging potential:

Before opening and under the right conditions (as described above), this sake can be kept for several months. Unpasteurized sake is alive and therefore fragile. After opening, it’s a matter of taste: the usual shelf life is about ten days in the refrigerator. After that, your unpasteurized sake runs the risk of developing flavors that purists consider flaws… Or interesting to the adventurous. It’s up to you to decide.

Serve at any temperature:

Sake can be served chilled (8-10°C), at room temperature (13-16°C) or hot (30-55°C). Each of these serving temperatures sheds new light on its aromatic profile.

If you wish to enjoy your sake warm, we recommend that you heat only the amount of sake you wish to enjoy warm. Purists use a small bottle called a tokuri and heat the sake in a bain-marie. Sake enthusiasts heat the sake in the microwave. Honestly, both work. Serve in wine glasses or sake cups.
