If you’re looking for a rice that won’t mess up your sushi or maki preparations, Epicerie Umai offers this high quality Haenuki rice. This variety has everything you need to develop soft, but elastic and sticky grains. The Japanese Grain Inspection Association (Tokken) awarded Haenuki a Special A Grade (Toku-A), the highest on their scale.

Haenuki is grown in Yamagata Prefecture, a region with a favorable environment for its cultivation. The rice fields stretch along the foothills of the mountains, with an oceanic influence tempering the harsh climate. The forest provides nutrients through groundwater and rivers to nourish the rice plants. The result is high quality grains.

Ideal for sushi, Haenuki rice is also great for risotto. It is available in 500g bags.

Uses:

Haenuki rice is ideal for sushi, maki and onigiri. It can easily compete with Italian risotto rice.

The rice should be rinsed several times before cooking until the water runs clear. One volume of rice equals 1.2 volumes of water. Once the water has been absorbed, wait 10 minutes, then aerate the rice by stirring. Then use your expertise or your favorite recipe to prepare the sushi rice.

Storage:

Store in a cool, dry place. Keep away from light.
