The Koshihikari variety is considered the best and most popular in Japan. Like wine, this rice can take on terroir characteristics depending on its origin. It’s a short, shiny grain that lights up the eyes and the palate.
Agri Yamazaki grows its Koshihikari on the banks of the Iinuma River in southern Ibaraki Prefecture. These rice farmers work organically, respecting the land and taking care not to deplete it. Chemical products and fertilizers are banned, and the rice bran is returned to the soil to nourish it once again.

For the record, this rice is named Masakado Hikari after the famous Shogun Taira no Masakado. Born and living in the region in the 10th century, he was deified after his death and offerings are regularly made to him to appease his malevolent spirit.
Usage:
Masakado Hikari Mai Organic Rice offers all the qualities of the Koshihikari variety. Its short, shiny grains are perfect for making sushi, maki and onigiri. As a side dish, this rice goes very well with dishes in sauce, giving them a pleasant, chewy texture.
To cook, rinse the rice several times. Cook with 1.2 parts water to one part grain. After cooking, let stand for 10 minutes and stir to aerate the rice. Makes 75 grams of dry rice for one person.
