Shiso, or perilla, is undoubtedly the most widely used aromatic plant in traditional Japanese cuisine, especially in its red version. Its large, crenellated leaves are used for coloring, decoration, and most importantly, as a condiment: its refreshing yet rounded flavor, somewhere between mint and cinnamon, goes perfectly with both hot and cold dishes.

With this rice vinegar, you can enjoy this unique flavor without having to go looking for fresh shiso leaves, which is quite a chore in our part of the world. Its high shiso content (10%) is softened by a touch of candy sugar, allowing it to bring out the full depth of the plant’s flavor.

Shiso-infused vinegar is a creation of the three-hundred-year-old Tobaya Suten vinegar company. Twelve generations of brewers have passed through the vats. Their expertise and innate sense of harmony are evident in all their creations. That’s why we offer their vinaigrette, rice vinegar, and plum vinegar, among others!

How to use:

To spice up your vinaigrettes, your sushi rice, your oysters, your root vegetables (turnip, daikon…) or even your desserts. Go for it!

Refrigerator, after opening, away from light and heat.
