A type of pickling, shibazuke is first and foremost a technique: soaking pieces of vegetables (often cucumbers) in a brine enriched with herbs and spices. The goal is to create a harmony of flavors without losing the freshness and crunch of the vegetables.

Kyozuke’s Melting Pot version is packed with vegetables: cucumbers, of course, but also radishes and chopped eggplant, all enhanced by the combination of shiso and ginger, in a marinade that’s as delicious as it is explosive.

Directions for use:

Shibazuke is an original condiment usually used with Japanese rice. It can also be used in salads, sandwiches, with meat, or as an aperitif to cleanse the palate and awaken the taste buds.

Storage:

This product is to be stored in a cool, dry place, away from light and refrigerated after opening.
