Here’s an original product, to say the least: rice vinegar mixed with ume plum, also known as Japanese apricot, with a touch of candy sugar to boot.

What could possibly go wrong? Nothing. The acidity of the rice vinegar is balanced by the sweetness of the plum, which gives the whole thing a nice color. It’s subtle and fruity, sweet without being syrupy… In a single word, delightful.

This is all thanks to Tobaya Suten, a company that has been carrying on the tradition of master vinegar makers for over 300 years. Based in Fukui (central Japan), Tobaya Suten has never stopped reinventing itself, expanding its range of vinegars and condiments over the years.

Its approach is simple: to add flavor to food without ever changing it. Behind this idea there is inevitably hard work, but also a belief in a superior force – not to say divine – that acts like an invisible hand on the fermentation process… We’ll be content to salute the action of time, which sublimates the action of the bacteria contained in the vinegar mother mixed with the alcoholic rice.

Use:

This arranged vinegar is a great addition to vinaigrettes, but can also be used to deglaze casseroles (plum ume blends well with cooking juices). A few drops will also make a wonderful addition to a fruit salad or even a highball.

Storage:

Glass bottle, store in a cool, dry place, away from light.
