Description

In Japanese, the word “tawarayuki” refers to the rolls of snow that sometimes spontaneously form on mountainsides. It is this freshness in motion that the Haneda Brewery seeks to capture in this smooth, well-balanced cuvée. A sake like a walk in the sun at the beginning of winter.

Storing:

As an unpasteurized sake, Tawarayuki should be stored in a cool place between 2 and 5°C. Even more than pasteurized sake, it should be protected from light. For longer storage, it is best to store the bottle upright in a dark place. Laying the bottle down brings the sake into contact with the cork, which can be damaging. We should point out, however, that some purists like to store unpasteurized sake at room temperature to allow its aromas to develop.

Water, rice, koji rice (Alcohol content: 18%)

Shelf life:

Before opening and under the right conditions (those described above), you can keep this sake for a few months. Unpasteurized sake is alive and therefore fragile. After opening, it’s a matter of taste: the usual shelf life is about ten days in the refrigerator. After that, your unpasteurized sake runs the risk of developing flavors that purists consider flaws… Or interesting, according to the adventurous. It’s up to you.

Serve chilled or at room temperature:

This sake can be served chilled, between 8 and 10°C, or at room temperature, between 13 and 16°C. When served chilled, its aromas will be more concentrated and its alcohol more subtle. At room temperature, it is more full-bodied and reveals a little more of its alcohol. To best appreciate its bouquet, use a wine glass. For those with a passion for texture, we recommend a sake cup.
