Similar to tosazu, sanbaizu vinegar is an original condiment in Japanese cuisine, combining several of its main ingredients (rice vinegar, mirin and soy sauce), blended and flavored with dried bonito, tuna’s cousin.

Suffice it to say that the umami is present and sublimated by a delicate smoky flavor that gives this vinegar a nice complexity.

The company responsible for this product is Sennari, based in Hiroshima Prefecture (Honshū Island, southern Japan). Sennari produces not only rice and apple vinegars, but also condiments and sauces made from… vinegar! And to make sure it doesn’t go sour, Sennari relies on the local water source, whose exceptional quality is universally recognized. In fact, the brand has made a brilliant start in the organic sector.

How to use:

Sanbaizu vinegar is ideal for seasoning salads and other dishes (a few drops on rice and you’re in heaven). It also goes well with seafood: shellfish (especially oysters), squid or seaweed; you won’t be able to live without it.

Storage:

Glass bottle to be stored in a cool, dry place, in the refrigerator after opening.

Rice vinegar (50%), sugar, soy sauce, water, salt, mirin, kombu extract (rishiri), bonito extract (2%), dried bonito (makurazaki) (0.5%).
